Late winter here in New Zealand and I've started to make marmalade with my Nippon Orangequats, Rangpur Limes and Eureka Lemons although any citrus will do. I use this recipe because it never involves peeling or seeding the fruit. It was in a provincial newspaper a few years ago and it has never failed me. Wendys never fail marmalade. 1.5 kilos citrus (3.3 pounds) 2 litres water (.5 US gallon) 1.5kilo sugar (3.3 pounds) Wash fruit then place in a saucepan with the water. Bring to the boil then simmer for 2 hours with the lid on. Allow to cool (I usually leave overnight). Remove fruit with slotted spoon then mash with a potato masher. Remove stray pips. Return the pulp to the liquid, stir, then measure. Allow one cup of sugar for every cup of pulp. Bring measured pulp and sugar to the boil and cook for 15 to 20 minutes. Test regularly until setting point is reached. Skim off any scum then pour into clean jars and seal. This is a simple recipe. I like it. I am going to try it with Mewia kumquat and Harvey lemon.

This is a simple recipe. I like it. I am going to try it with Mewia kumquat and Harvey lemon. How'd it work out? My meiwa's have lots of seeds. I'll try it with the more seedless fukushou quats.
